The visionary dream of Paul, the owner of Paesano Pizza e Sugo Pasta was to have every Glaswegian to eat a bowl of pasta like you get served in Bologna. We helped Sugo Pasta creating a menu that would fit the purpose of serving up to 1700 people per day. Train their stuff in using extruders and how to handle, prepare and store correctly fresh pasta. We also focused on passing the knowledge to their chefs on how to make every single dish from scratch only using the best ingredients and in the Italian traditional way.
